Shakshuka in Mallorca

KM0 Levantine, made fresh every morning

The breakfast worth driving inland for. Eggs poached in our spiced tomato sauce, served in a hot pan with hummus and warm pita - the way a Levantine grandmother would make it, with Mallorcan tomatoes.

--- BLOCK 2: THE STORY ---

Shakshuka is a Levantine breakfast classic - eggs poached in a spiced tomato-and-pepper sauce, traditionally served in the same pan it was cooked in, with bread for scooping. It belongs to the same family of dishes you'll find in Tel Aviv's Carmel Market, in old Jerusalem cafes, in the Tunisian coastal towns where the dish was born before crossing the Mediterranean.

At Deli Santa Maria, the shakshuka is made the way the family makes it at home - slow-cooked tomato base, a careful blend of cumin, paprika and a touch of harissa, eggs added at the very end so the yolks stay molten. The tomatoes come from Mallorcan growers in season, the eggs from local hens, the herbs cut that morning. It's the breakfast you remember, made fresh on a quiet inland Mallorca morning.

Why our shakshuka tastes different

Most shakshuka in Mallorca is made with industrial tomato sauce. Ours isn't. The tomatoes come fresh from Mallorcan growers - the same producers who supply the Sunday market in Santa Maria del Cami. In peak summer that's a sweeter, riper tomato; in winter it's a slow-roasted base that builds flavour through cooking time.

The eggs come from local hens, not bulk wholesale. The harissa is made in-house from dried Mallorcan peppers. The cumin is ground fresh, not pre-ground from a tin. Small differences, compound flavour.

This is what "KM0" actually means in practice - not a marketing sticker, but a daily choice about where ingredients come from and how much that costs to do right.

--- BLOCK 6: FAQ ---

Q: Is the shakshuka vegan?

A: The shakshuka contains eggs, so it's vegetarian but not vegan. For vegan diners we recommend the meze mixto (EUR 23), the falafel plate (EUR 18), or the vegan burger plate (EUR 18) - all flavour-forward Levantine plates without the eggs.

Q: Can I get shakshuka after 12:00?

A: Yes - the shakshuka plate (EUR 16) is served through lunch, not just breakfast. It's the bigger version with hummus meze, fries and pita. Some prefer it; some prefer the lighter breakfast version.

Q: Is the shakshuka spicy?

A: There's a touch of harissa in the base for warmth, not heat. You'll feel the spice but it won't burn. We can dial it up or down if you ask when ordering.

Q: Can I take shakshuka away?

A: Yes - we pack it in a heat-retaining container with pita and hummus on the side. Note that shakshuka travels better than most dishes, but the eggs are best within 20 minutes of leaving the kitchen.
