Falafel is one of the oldest street foods in the Levant — deep-fried chickpea patties seasoned with fresh herbs, cumin and coriander, sold from carts in Tel Aviv's Carmel Market, in old Jerusalem, in Cairo's narrow lanes. Every family has its own recipe. Ours comes from home.

At Deli Santa Maria, the falafel is made the way the family makes it — chickpeas soaked overnight, mixed with fresh parsley, coriander and garlic, shaped by hand and fried to order. Not pre-cooked. Not frozen. Not reheated. Each falafel is fried when you order, so the outside is crispy and the inside stays herb-green and moist.

The chickpeas come from Mallorcan producers. The herbs are cut fresh. The hummus is made in-house from dried Mallorcan chickpeas. Small differences, compound flavour.

Why our falafel tastes different

Most falafel in Mallorca is made with dried chickpeas from elsewhere. Ours isn't. The chickpeas come from Mallorcan producers — the same growers who supply the Sunday market in Santa Maria del Cami. The herbs are cut that morning. The hummus is made in-house from the same chickpeas, slow-cooked until they're soft enough to blend smooth.

This is what "KM0" actually means in practice — not a marketing sticker, but a daily choice about where ingredients come from and how much that costs to do right.

Best time for falafel

Weekday mornings, 9:00 - 12:00

The quietest service. Order at the bar, eat at a terrace table. The village is calm, the falafel is fresh.

Sundays, 10:00 - 14:00

The busiest service — the market crowd. Best to reserve a table on WhatsApp if you're coming with 4+ people.

Cyclist stop, any open day

The falafel plate is the most-ordered dish among the cyclists who stop at Deli mid-ride. High-energy, fast to serve, protein-rich. Bikes welcome on the terrace.

Q: Is the falafel vegan?

A: Yes — fully vegan. The falafel is chickpea-based, fried in vegetable oil. Served with vegan hummus, fresh salad and pita. A gluten-free version is available — just ask, we'll serve with extra salad, hummus and fries instead of pita.

A: The falafel itself is gluten-free. We can serve your order with extra salad, hummus and fries instead of pita. Just mention it when you order.

Q: Is the falafel spicy?

A: The flavour is herb-forward — the green crumb comes from fresh parsley and coriander. Cumin and coriander give warmth, not heat. If you want spicy, ask for harissa or zhug on the side.

Q: Does the falafel travel well for takeaway?

A: Yes — falafel is best eaten within 30 minutes of frying for peak crunch. The pita version is sealed and holds well. The plate version is packed with components separately so nothing goes soggy.
